500g loin of locally bred pork, cut in cubes
1 large onion, peeled & sliced
1 tblsp(15mls) olive oil
1 apple, washed, cored & diced
1 x 500ml bottle passata
Freshly milled pepper
A light pinch of salt
1tsp brown sugar
1 medium tin haricot beans
1 tblsp chopped parsley
ß Heat oil in pan and sauté onion.
ß Add pork and sear for a couple of minutes.
ß Add passata & simmer gently for 40mins until pork is cooked through & tender.
ß Add remaining ingredients & stir to combine. Simmer for a further 10mins for flavours to absorb.
ß Serve with boiled rice & seasonal salad.
ß Add a teaspoon of cornflour dissolved in water to adjust consistency, only if required. Bring to the boil once more prior to serving to cook out flour.
Serve with boiled rice or potatoes.
