spacer Recipes: Rich Almond Cake with an Apple Benromach Sauce

Ingredients:
100g butter
75g ground almonds
40g plain flour
150g caster sugar
3 eggs
Very light pinch of salt
Grated rind of 1 lemon

For sauce:
450g apples, peeled & sliced
Approx. 3tblsps.water
2tblsps Benromach malt
1tblsp.lemon juice
2tblsps. Honey

Method:
Pre-heat oven to 180 C (Gas no.4). Grease & line a 7"sandwich tin.
Cream butter & sugar.
Beat in the eggs.
Add ground almonds & lemon. Continue to beat for a minute before folding in the flour.
Pour into tin & bake for 30mins until golden & set.
Dust with caster sugar.
To make sauce: stew the apples with the water until soft & puree. Add remaining ingredients & puree once again to complete the sauce.
Serve hot or cold with almond cake.
