15mls (1tblsp) olive oil
1 onion, peeled & chopped
1 handful lovage (spinach if unavailable)
2 bunches watercress, rinsed & roughly chopped
300mls chicken stock
50mls semi skimmed milk
A twist of black pepper
25g ground almonds
3 dessertspoons crème fraiche
Chives to garnish
Croutons to garnish
Heat oil & soften onion in a large pan.
Add greens & stock. Simmer for 5mins until they are completely wilted. Season.
Add milk & blitz to blend.
Heat thoroughly over a medium heat, stirring in ground almonds.
Serve piping hot with a scoop of crème fraiche, croutons & snipped chives.
